Ok what keeps a ceiling up..i mean shouldnt it fall??

The ceiling doesn't fall because the joists and rafters (wood beams) that comprise the ceiling structure are actually "sitting" on top of the walls which holds up the entire ceiling and roof. It's very much like a bridge, where beams span a distance by sitting on abutments at each end.

Finish (sheetrock, plaster, etc.) are the attached using nails or screws.

Drywall ceilings are nailed to the support beams.
Drop ceilings lay in grid supported by wires.

depends on what is used. drywall is secured to the ceiling joists.suspended uses brackets which in turn are attached to the joists.whatever is used is attached to the joists in one way or another.
