Well I say Hawaii in the off season is great. I've been twice once in November, and once in June. November is off season and the flights are less and it is less crowded. The weather in Hawaii is always the same year round which makes it a great place to go ANY time of year. Basically April to September is peak season along with Christmas time.

I like Hawaii in October (when school is in session and there are fewer kids), but if you go in the spring instead (March) the whales are migrating and that is pretty cool to see.

Weather-wise, it's pretty much the same every day.... highs in the low-to-mid 80s, trades 10-20 mph, with a light shower every day around 10am lasting 5-10 minutes (at least on Waikiki, where we usually stay).
