Why is everything spelled with a K? Why didn't they just use a C? Is there some kind of meaning behind it?

There is a meaning behind it. If they decided to call it Mortal Combat, it can be copied easy as it consists of two general words.

By changing the C to a K, you have exclusive rights of the title, as you 'invented' a word (so to speak).

No, there's no meaning behind it. It's just what they decided to use. You're basically asking "Why is Cap'n Crunch not Captain Crunch?" It's the same.
