I've picked 3 very good series. These may be older, but they are all excellent examples of anime series: good stories, character development, action, humor, a little romance, a little gore, and great endings.
Full Metal Panic - a great older anime series. The anime is good, the character development and storey line are great. Good humor. It's the story of a relationship between a high school student and a teen age mercenary who operates a Mech. So it goes back and forth between the Mech action and high school situations. It's also got some very funny moments.
Cowboy Bebop - another classic series. The story of 3 disfunctional space bounty hunters, their relationship, and escapades. Truly likeable characters, funny, and an incredible ending.
Hellsing - the story of a secret, London based government organization that tracks down and kills ghouls and vampires. The main characters are an extremely powerful vampire and a police girl who is reluctantly converted to be a vampire.

I am just like you - I like action, humour and a bit of romance with no gore and horror.
Full Metal Panic - THE best series for what you're looking for, and is finished. The special Fumoffu series is great.
Get Backers - Another hilarious anime (in fact I want to watch it again right now), with a ton of humour and action, and lower on the romance, but it's still there.
Yu Yu Hakusho - Another good one with more action and humour, but not a lot of romance, but it's kinda there...
Ranma 1/2 - Good action, kind of weirdish story about a guy who transforms into a girl when splashed with cold water, but was a huge hit and what got me into loving anime. VERY long anime, tons to watch here, and has a good balance of action, humour and romance.
Fruits Basket is okay, it's unfinished (grr when will they come out with the finished series!!) but kind of twisted/fun. A bit on the girly side though, but I really enjoyed it nonetheless.
Oh my Goddess! (Ah Megami Sama) - Bigger on the romance, has a bit of action, quite some humour, may be better in manga format...

Full Metal Alchemist. it has the three things you ask for: action, humor, and romance. It's probably one of the best anime series, and it has a movie that should be watched after it (you will want to watch it to know what happens...). it is trully hooking!! it has about 50 - 53 episodes (dont remember exactly). it's sooo fun, and it has a little love story too (maybe you can consider it has 2 love stories.. depending on how you see it). i still dont know anyone who doesnt like/love this series, so i always recommend it. to both animeholics and simply fun searchers.
you might also like Slayers, or Evangelion. a hooking one is also Marmalade Boy, but that one is more like a sticky love story. it has 70 - 75 episodes, and a fast ending... well liking it or not depends on your taste.
in any case, my favourite is Full Metal Alchemist, and the one i recommend you;)

I would recommend Nana, Paradise Kiss, Sailor Moon, Kodocha or CardCaptors Sakura, but none of them have any action, though center on humor and romance. A good story with all three elements would be something more along the lines of Eureka Seven.

Try watching the Venus 5. It has a lot of action and romance as well. It is like the fantastic four only with five girls.

ITs a very deep anime with political and psycological elements.
