That sounds like a great project.
Firstly, the most informative sites and best deals are not based in the US for Europe. You need to access local sites based in Europe with US customer service.
There's a directory called Tourism Rankings which provides links to all the National Tourism Offices in Europe. Here's the link:
http://www.tourismrankings.com
http://www.tourismrankings.com/Spain/
http://www.tourismrankings.com/France/
http://www.tourismrankings.com/United-Kingdom/
etc etc
Then there is "where to stay". So folks need to be able to work out their stay by location, price, star rating , last minute or advance booking, photos and descriptions. This site has an excellent sort tool for hostels, hotels, apartments and resorts with customer service desks in the US, even though it's local to Europe. Here's some sample pages:
Paris - http://www.cheaperthanhotels.co.uk/France/Paris/
Vienna -http://www.cheaperthanhotels.co.uk/Austria/Vienna/
London - http://www.cheaperthanhotels.co.uk/United-Kingdom/London/
Barcelona -http://www.cheaperthanhotels.co.uk/Spain/Barcelona/
Rome - http://www.cheaperthanhotels.co.uk/Italy/Rome/
etc etc
There is a directory of car rental offers for US and non US citizens here with pick ups in most places:
http://www.flydriveandstay.com/Country/France/
http://www.flydriveandstay.com/Country/Spain/Barcelona_Airport/
etc etc
For Train travel you can't go past the Eurail site:
http://www.eurail.com/
And for air travel ..... well that's a big question. You need to use US airline sites and the popular travel portals like Expedia, Priceline and Travelocity.
Hope this helps and others can add some more good ideas. Good luck.

Hey, for people ages 18-35 years old, Contiki Holidays is a great site. Check them out at www.contiki.com . They offer travel tours all over Europe, North America, Australia, and New Zealand. I went to Europe with them for two weeks and had a blast. Hopefully some other people will find their site useful!
