The National Curriculum and National Numeracy Strategy have loads of information on children's speaking and listening skills as a good base. You can research the national Oracy Project as they did lots of research into speaking and listening. Douglas Barnes is a good author with lots of working on speaking and listening. Also the QCA supply a document "speaking, listening, learning:working with children in key stages 1 and 2 Handbook". Another good book is by E Grugeon, L Dawes, C Smith and L Hubbard - Teaching Speaking and listening in the primary school 3rd edition. finally, I found Not So Simple Picture Books: Developing responses to literature with 4-12 yar olds by P Baddely and C Eddershaw. Piagets theory is a good one for childrens developement and when you read it you find that many of the theory's are used in schools today.

i reccommend you research Jean Piaget.
outstanding work, i must say.
also, there was a case study by Koluchova (1972, 1976, 1991) concerning two twins and their developement - including speech and literacy.
