Robert Plant and Jimmy Page - What's not to love? Crazy off the wall lyrics that still have meaning. Not many people can pull that off.
Also, love Billy Joel. "Piano Man" is one of my favorite songs ever.

Songs are good when they are thought through from top to bottom, yet have some room for creativity.
Some of my songwriting idols (not as famous for singing) are:
Warren Haynes
Hugh Prestwood
Paul Davis
Nile Rodgers
Kevin Savigar

You can tell I'm an 80s child, but Jon Bon Jovi and Richard Marx are excellent songwriters. And for country music, Brad Paisley is amazing.

Hmm.. that's a tough one.
There's two songwriter/musicians I think are great, and they are John Mayer and Jack Johnson.
For me, their lyrics are more like stories, and you can actually visualize what is happening, and you can feel the emotion they had at the time they wrote it.
Have a good one!
