I don't think you want to cover the walls with those ratty looking cartons. Besides they are a fire-hazard and would all go up in flames if something hot touched them.
A few years a go there was a nightclub that tried to skimp on the cost of soundproofing by putting foam rubber padding on the walls. The foam caught on fire and 100 people listening to a band died before they could escape.

Egg cartons don't sound proof. You need something with density. An egg cartong is not much more dense than a sheet of paper.

Contrary to popular belief, egg cartons were not used to sound proof... they were used to reduce echo by introducing an uneven surface to a flat wall. If you think of sound in it's wave form, it will bounce off in many directions instead of just one; right back to you. It is generally used to improve acoustics, not sound-proof. If you want to sound proof, you need Roxul sound (and fire) proof insulation. It is very tight in it's make-up and reduces sound passing through it (aka sound penetration). The easy part is buying the Roxul, the hard part is putting it behind the wall boards... oh dear, always something eh?
Good Luck!
