Jurgen Habermas is a (German I think) social theorist of Education and although his stuff is pretty difficult, if you look him up I'm sure you'll find links to other theorists which should help you to build an essay around a 'philosophy' of education.
For example, the work of Habermas concentrates I think on politics, civil society and education, so perhaps you could build an essay around whether social class matters in the classroom and your philosophy could be to treat all pupils alike, regardless of social class, but your essay could examine the different problems posed by social class when trying to act out this philosophy?

I suggest reading John Dewey. http://en.wikipedia.org/wiki/John_Dewey
and Noam Chomsky (at least on Linquistics) and
Ayn Rand for alternative opinion and
Judith Rich Harris "The Nurture Assumption" to get started.

this isnt a quote... more like a topic. but try looking up Paulo Freire and his theory of the Banking Method of Education. maybe you could form an opinion on education supporting or refuting his theory.
