The bigger sail catches more wind that a smaller one so theres far more wind powering the boat.

air is not nothing...it is made of molecules of gasses moving around. They strike the sail and exert a force on it, which is attached to the boat so they all move together. If you have a small sail you get x number of particles striking it, if you double the sail size you get 2x hitting it.
