congratulation to both of you!!! Now let me tell you, you will be the 3rd person that I will give my advice on what to do, so far my first two took my advice and I'm happy that those 4 people are on the right road.
Every body here are telling you all kinds of things that can or might work, but just follow your heat for this. Material things will be very nice but from your heart will be more a lot fun and romantic.
Plan it carefully and just tell your husband that you want to have a nice dinner out, dont let him make a reservation in a restaurant or else your plan will not work. Now the day of your anniversary, set a table for two, put a long stem rose on top of it, then buy candles lots of it,spread it all over. Then find a soft music that the two of you do enjoy listening, jazz maybe??
If he drinks, but white wine (chardonnay, )cook his favorite dinner or maybe steak, when all of this are done, make sure that phoe are off, no contact from no one,and then if you have a nice black dress, wear it with high heels.
From there, the two of you will follow your heart and your evening will be perfect................best wishes to both of you!
p.s.
if you need more input let me know...............

Here's something creative that will be appreciated and you will have fun doing:
Make up a crossword puzzle and have all the hints be personal inside moments and jokes that only you two would know about. Put it on a poster board and add some clipart and some pictures to it!
The crossword puzzle could be time consuming and a bit frustrating ... you could do the same idea with a WORDSEARCH or WORDFIND puzzle.
Put your computer skills to work! Use Excel, get clipart from Yahoo Images Search, copy them, and reformat them, use a gluestick to put on posterboard.
Use graph paper, and pictures from magazines if you are not as good on the computer, and it will give it more of a homemade feeling.

It depends, how long have you two been married and what does he like. If your doing the whole calendar thing Hallmark has a list of what to give each year of an anniversary and you can probably find one online too.

For our anniversary last year, I booked an extended weekend away in Banff, Alberta. I didn't tell my bf anything, I pack all his clothes, loaded up my car, and after work on Thursday told him that we we're going out for dinner. After I got him in the car, I just started driving and didn't tell him anything until we got there. He was super surprised and we had a great weekend.
