I hear that California is a great place for vegetarians, because of the variety of cuisines available for vegetarians there.

I don't remember too many vegetarian restuarants when I worked in Carlsbad, but George's Restuarant in Encinitas always had some great vegetarian food (on old highway 101 towards the beach, then south at the Encinitas Blvd exit off I-5).
For some other suggestions, I found two great sites for you to consider, Chowhound and Cilantrolive. Chowhound has a recent blog from someone asling the same question you are, and they have some great responces. Cilantrolive has their own website and it sounds interesting too.
There is also a Marie Calendar's right at the Pionsetta Exit off the freeway that has a variety of foods, as well as several other places with options.

It's a little south of Carlsbad, but try Ki's in Cardiff. Its on the 101, so it has a nice ocean view. A little further south, in Solana Beach, there's the Pacific Coast Grille, also on the 101. It has a great veggie selection.

Have you tried the Coyote Bar & Grill? They used to make a mean vegetarian platter. They MAY have gone out of business. I used to drive to Encinitas for the best Vegetarian Cuisine. The closer you get to the Buddist Temple (in Encinitas), the more vegetarian restaurants you will find on or by the roadside!
