we are having with our insurance company. they claim that the pilings our beachfront building is on is part of the foundation and therefore
not covered by insurance if they burn.

Sounds like it's time to look for another insurance company. Are the pilings partially above ground? Wood? Is your house on stilts that are the top parts of piles? With a normal house, if the house burns the pilings are likely to survive since they are mainly buried below ground and there is no access for oxygen to fuel a fire in them.
