The theory isn't that man evolved from Apes.
The theory is that both Apes, and man had a common ancestor.

man did not evolve from apes. apes and mankind have a common ancestor, as evident in many areas of physiology, genetic biology and brain function

We are from a different strain of ape. Some birds have developed similarly. osrtiches are large but dont fly. Humming birds are small and can fly. Some mammals have hair - some don't. Bats fly - their relatives don't. Some are built for climbing - some aren't. Everything developed slighly differently.

I agree with Doctress and the Bloke, but we still haven't really found that "missing link" the common ancestor. I still like my theory that we're all part of a big experiment and just little microbes in the Supreme one's petrie dish.

You could ask why hasn't every species of plant evolved into a tree.

Why haven't jellyfish evolved into ... bony fish?

Think about this for a moment. We have over 5000 species of beetles, we have over 15.000 species of birds. 10.000 plus species of fish. But only one species left of man. Why are we still hoping apes are related?

I was going to say the same as Doctress - so I still will - Same ancestor - different evolutionary routes, the same way as we have different types of fish, birds etc. etc. etc.
