If you look in any Haynes Manual it has a page with general torque values for Metric and sae bolts. These are "GENERAL" values. If you want the proper torque values for a given bolt on your car then look it up in the repair manual for your Specific make modle and year.

That would ONLY give you what the bolt can handle. Not the amount of compression required to seal a gasket without crushing it.

There's more to it than that. What you're torquing down, what you're torquing it down to and what if any gasket is under it determines how much to use.
