A works cited page contains citations only for the material that has been directly quoted in then paper, right?

It depends. If you're using it strictly as a 'works cited' page then yes, include only the information you actually quoted. If you're using it as a 'references' page or something like that, you should include everything that you read when you were gathering information, whether you cited it or not, it added to your knowledge and you should cite it.

I usually add all the things that I use, whether I cite them or not, and simply use two pages, one for cited sources, one for uncited sources (but don't call them that...call them references).

A works cited page contains a list of any works who you directly quoted or whose ideas you paraphased. You have to list BOTH.
