None that are carribean, sorry. Mexican-Canadian; Raffi Torres comes to mind. Scott Gomez also and Manny Fernandez.

I used the link below to check a list of NHL players and determine where they are from. I found that Robyn Regehr is Brazilian and Scott Gomez is Puerto Rican.
