I am trying to find out what backspacing is on wheels and I just need info in general about wheels and tires for off-roading use if anyone could help I would be very greatful.

Your back space refers to: The inside or brake side of the wheel's measured space from across the rim (use any straight edge) straight down to a flat area around a lug hole. This measurement is your backspacing. That measurement is true only if you're measuring from a stock standard wheel that came off your vehicle. When buying replacement wheels never change the standard backspace. If you increase backspace the mounted tire or wheel scrape on a tie rod end, spindle or the front anti - roll bar (sway bar) when turning.

Backspacing is the distance measured from the inside of the wheel to where the bolt pattern is to the outside edge of the wheel.This measurement can be taken by placing a straightedge on the inside of the wheel and measuring from it to the inside of the wheel at the bolt pattern flange

how much of the wheel is on the inside of the axel.. for example one wheel[and tire] may stick way out of the tire well and another same size is mostly stuffed inside the well..
