210 on the gauge is normal (gauge may be a bit off, the standard thermostat for that car is a 195 deg). If the gauge reaches 210 and stays, all is well there.
When you select defrost, the air conditionig system kicks in. The defrost uses cold as well as hot air to defrost your windshield. The condensor cooling fan will always run in this mode.
You either have a faulty blend door or motor, or a bad control unit. If this is a grand Cherokee with auto temp control, it has a diagnostics capability built into it's computer. If a plain jane Cherokee, I would suspect blend door motor.

i own a repair shop,and id check the thermostat in it,but it could also be a faulty gage on it causing this also,because that's almost in the normal range for that vehicle,it sounds like the cooling fan relay is sticking on it,and is cooling it down to fast,but a thermostat is a cheap item to replace,so id go ahead and replace it,and make sure the radiator is not stopped up on it,this may actually be the cause of what its doing,its not going to cost you that much to find out,good luck with it,i hope this helps.

Sounds like the thermostat! Was it sudden or is this an ongoing problem? Also, check in the radiator to make sure you have circulation ( radiator is not clogged or bad water pump), no bubbles (leaking intake or head gasket), and no contamination like transmission oil or motor oil!

Seems like it is stuck, time to get a new one. Also check you radiator and make sure it has water/coolent in it.
