Catherine Zeta-Jones (I wish she'd do more movies) - she's breathtakingly beautiful and extremely talented. Beauty and talent together.... couldn't ask for more than that.
It's pretty tough to call an actor because I have not been impressed with any lately, but one that comes to mind is Sean Connery - he is absolutely talented and in my opinion has not had a disappointing performance his whole career. Even if a movie were disapppointing (a bit because he's chosen truly good movies to act in) it had nothing to do with his Performance in the movie. He delivers his best EVERY time.

Kathy Bates and Judy Davis are two female actors I love. They're hilarious and wonderful. Bates was great in 'Misery' as a serious actor. Older women are often overlooked but have so much talent.
Jim Carrey is the best physical comedian ever. People seem to either love him or hate him. And Tom Hanks...well, enough said about him. Awesome.
