This is not as easy as others think.

Most finishing work is done using plaque à plastre (plaster board). These artisans are common and called plaquistes.

Real plasterers are much harder to find. They tend to work on restoration of old properties, rarely on newer properties.

They are locally based. The best way to find them is to post on a forum local to the area you are in.

You'r off to a good start with a French plasterer.
Getting one from the U.S.A. would be too expensive. He would expect you to pay his way over there and his rent while he's there.
