i bought fake plants that are supported by thin metal rods?

if or when they rust, will my fish die?

You need to be sure the metal is completely covered by the plastic, or it will rust and poison your tank.

I don't know abot dying but it can't be healthy for the fish. I would replace any that have gotten to that point. It's not worth the chance. Good luck. maybe invest in more sturdy plastic ones without metal next time.

Stainless steel is normally OK, but I wouldn't risk it.

If they are made of Titanium they should be OK too...though I doubt that. LOL
