A great one-man boat is the MC Scow. Suitable for beginners and good for most types of weather, and can be raced competitively and pleasure sailed with 2 or 3 others..

It's a one-design boat so there will always be a market for sellers and buyers. Snoop the web starting with above site. With luck you can find a fleet or owner near you. Go ask for a ride. Skiffs,Launches,Cats,Sloops, Catboats,lots....
Laser is a popular one, fun and fast! Vanguard makes them now.
Almost any Catamaran under 22' can be handled easily.
I have been aboard nine or ten that were designed for single handling.
Folksboat,AMF,Vangaurd, Cape Dory and others. Almost any sailboat can be Siglehanded, some are set up for that,others are not, all lines lead aft is usually a sign of a SH Setup Sailing Vessel. or one that is comfortable with one pilot.

Any sloop under 30 feet can be handled by one man. I have a 26 foot cal and single hand her all the time no problem I have handled 34 foot coronado's single handed the docking being the only area where I had to really take care or wish I had another person on board.

O-Day, McGregor, Catalina, Hunter, Rhodes etc etc,

Trailer sailors are a group that sail boats under 23 feet and generally all can be single handed and towed behind just about anything. A quick search on the web will reveal hours of info to pour over. It all depends on what you want to do in the boat and where you expect to sail to.

it depends on weather you are racing, or cursing. Racing stick to a skiff or something around or under 20". If you are an experienced sailor there are many yachts that can be cruse single handed, one of the best ones would be the Beneteau Oceans Clipper line. I have a friend that has a 47" and he can cruse under full sail by himself if he wants to
