how do you age a woody stem?

Most trees, you can count the number of rings and that will tell you the number of years old it is. This isn't always accurate, but most, it works. The rest, you will get a close idea.

Age as in make it look old? Leave it out in the elements.

Age as in how old it is? In forestry cores of trees are taken, rings counted, to determine the age.

Not sure what you want to know.
