Human being are naturally inquisitive. When someone says you can't have something your natural reaction is to ask, "Why?" It raises your curiosity. You begin to wonder why everyone is making such a big deal about why it's bad or why people keep "eating" it dispite it's being bad. So, you want to taste for yourself.
Then there is the level of excitement to it. Doing something in secret makes it special and exciting. It makes you feel special to have a secret.
So you start off wondering why, then you see how, and then you experience excitement from breaking the taboo. It's all sort of the reverse of the sour grapes motif. You can have it but you shouldn't, but that makes you want it all the more, lol.

It's the fact that the restriction makes the longing so much more powerful, turning your want into a need. Instead of just looking for a fruit, you need that sugary goodness; need that juice to moisten your lips... whatever we cannot grasp, we only stretch further to reach.
