Because all the photographs and illustrations in all the books in the world cannot give you a feel for how an organism is put together. It's not just the 3D relationship of all the organs (so a plastic model wouldn't to either), but also the way organs are attached to each other ... the fact that it is not a bunch of separate parts, but all the organs meld into each other seamlessly.
But if someone is busy just going "eewww" then this lesson will go right over their heads. This is (in my opinion) a key moment in every kid's development when they either get science, or they turn away from it.
As for homology ... the term 'homology' refers to two organs that are in common between two organisms, that has a different function in each. So a frog has a heart, lung, liver, spleen, stomach, etc, just like we do ... but I would not call these "homologous" organs because they serve the same function as the equivalent organs in our body.

I rather enjoyed that part of Bio class when I was in school. But I have an interest in the medical field and knowing how living things are put together and how they work. If we never examined the bodies of (previously) living beings then we would not be able to perform life saving operations and find cures for diseases. It's really necessary and a great hands on lab for high school students. Some of the other animals that I had to dissect in high school were the shark and the cat.

It feels controversial to do this stuff if your just exposed to it in a mandatory class. Me, well, I got assigned a pig. I think its to teach about creatues having internal anatomy and parts. People who can dissect and find answers and remedies are valuable. I couldn't be bothered to explore it myself though.

Homology means study of the same.
Homo = same
ology = study of
We disect animlas to learn about their internal structures as they are homologous with ours or the same as ours.
