I realize that many factors affect this question, like future occupation and what college, but generally speaking, which one is best to take.

AP Chemistry looks the best in my opinion. Biology doesn't seem as intense, and as far as I know, biology is only really difficult in college when it's combined with chemistry (biochem). I dunno what the hell AP Environmental Science could be or why they offer an AP course for it. Chem gets my vote.

Another thing to consider though is that many colleges and universities require some sort of general biology course, but no chemistry course. Often, chem is only required for BS degrees(Bachelor's of Science) or engineering. If you didn't end up pursuing this route, AP Bio might work out better for you because passing the AP exam would exempt you from having to take it in college and save you some money.
