From experience, I would say that stopping in Orange Grove, MS or Gulfport MS or Mobile AL would be good and about halfway there. Your other option would Sildell, LA. It just depends on how far you are willing to travel the first day versus the second day. There is a chance that you could make it to Pensacola and then you would have a short trip on the second day.

If you are going downtown Houston to downtown Orlando, then anything in a range from Biloxi, Mississippi to Pensacola, Florida (about a 60 mile stretch) would be good for you. It all depends on traffic on I-10. To be honest, though, I'd go more toward Florida than Mississippi/Alabama... lots and lots of refineries in the latter with some beaches, while Florida is a bit prettier.
Yahoo Maps also has a Holiday Inn overlay option, and there are about a dozen of them along that route in between my two reference points.

Birmingham is way out of the way...if you are planning on taking I-10 stop somewhere around Mobile, Alabama.... it is 468 miles from Houston and Houston is about 965 miles from Orlando....
