Janine's list is good. Add to it Actors Equity Association -- www.actorsequity.org -- the union for stage actors.

These are all labor unions: they're selective about who they allow to join, they offer protection for wages and working conditions, they offer health insurance options for active members, and they can (and sometimes do) go on strike.

A union actor is an actor who is a member of one or more of these unions.

Being able to join them, though, is a real Catch-22. You have to be a paid actor to get into the unions.
