A geocentric solar system is what people believed in Galileo's' time, that the earth (Geo) was the center of the solar system. Heliocentric is what we believe now, that the sun(helio) is the center of the solar system. Pan means all, and theism refers to gods, so looking at the roots I would infer that it has something to do with all gods.
