Only one when I'm changing gear!
Seriously though, when I did my advanced driving - I realised just how much more control you have over the car with both hands on the wheel.
If I'm driving fast - its both hands on and I concentrate.

Supposed to be 2 hands on the wheel. When shifting a manual transmission, you are supposed to retuen your hand to the wheel between shifts.
Hey, I don't make the rules! Wait, I don't follow them either!

Generally speaking one hand will do, except sometimes I drive with my knee which is really terrible, but how else can I pluck my eyebrows, I need both hands.
