It's a scent association thing. If you are exposed to a similar scent while studying (such as peppermint tea, for example) and then chew a peppermint-scented gum while taking the test, you will associate the smell with the information you studied and likely be able to recall things more easily. Scent is the strongest sense when it comes to memory, and it can be utilized in a number of ways.

Some people also consider the repetitive motion to be a stress reliever. It has also been shown that any kind of repetitive motion can relieve your stress and help you think more clearly -- if you have a habit of picking your fingernails or cracking your knuckles, for example, this could be a helpful repetitive motion to let you think more clearly.

Chewing gum whilst sitting an exam actually lowers concentration slightly because chewing is a voluntary action and is something you haveto think about. This is what I was told when a did my exams.

If you're taking the test at school it could make you dumb or maybe just look less smart. Some teachers don't allow it and you will get called down which would probably embarrass you and cause you to score lower.
