I have a lot of older cards and I went back to the POP league I used to play at this weekend. They let me play with my older cards, but said if I wanted to play in a real tournement, I'll have to have reference to a newer card.
Do I play the card with the originial wording or the new card wording?
And there are so many card "rewrites" for example there are altleast 9 different pikachus. How do I know which one can be used and which one can't be?

when you sign up for tournament they make you fill out a deck list sheet. Here you put the numbers on the bottom right hand side of the card. They stand for the series and the card number. The judges who approve your deck list will let you know which cards will need a reference and which cards won't. The ones with that need a reference will be played the way the new card is written.
Mysterious fossil is a good example of this. The older card has 10 hit points and the newer ones have 50hp and some have poke-body's on them. So the newer ones in my opinion is better.
Some cards can't be played at all. I think the ones from Neo Destiny and Neo Discovery can't be used.
pokegym.net has a complete up to date list of cards and references that you can print out if needed.

its kind of tricky, because the different pikachus all are different (and many other cards),they are each like a different Pokemon on their own. They have different attacks, hp and some have different trainers(Brock's Onyx, Misty's Starmie, Team Rocket's Meowth) The easiest way that i see is, find your favorite cards, the ones you play with, and just ask... 'can i use this card?' if you can't because it's not "up to date", then you have my deepest sympathy.
