Because God speaks in paradoxes.
He's three things at once, He's in time and space and completley removed. He's the good that allows evil. The Bible is filled with contradictions. He made Abraham (try) to sacrifice his own son. He decimated whole peoples out of spite. He made a wager with Satan for Job's Soul... why? He is conveniently absent for being omni-present, conveniently evil for being all-Good, conveniently impotent for being all-powerful. How do I understand a contradiction? I can't. No one can. The most religious person doesn't understand God.
Pascal's Wager, if that's what you're referring to, doesn't give a pragmatic solution as to whether or not to believe. There are a multiplicity of potential dieties to worship, and they're all spiteful of each other. I can't even trust God, knowing what He's done, so why would my devotion guarantee salvation? It could go either way. And then after a life of devotion, I've missed the best part of life-- which is living it without fear of damnation.

The common Christian view of this issue is that God is inherently paradoxical. If we could understand Him, He (by definition) would not be God. That is to say, there is no such thing as a comprehensible God.
There is also the small issue that people in power have traditionally misused the name and notion of God for their own ends, leading the common people astray. Centuries of obfuscation, confusion and deceit can make an idea a little hard to get a handle on.

Difficult?
The level of difficulty almost certainly correlates (inversely) with your level of faith. Those who faithfully accept God within the context of their own religious beliefs have no difficulty whatsoever.
Indeed, once you've begun to search for this understanding, you have walked away from faith and into a hornet's nest. It's quite fair to conclude that God is merely a man-made concept, like justice or perfection. And that, as such, is rendered an interpretation by each person who seeks this same understanding. Imagine trying to provide a simple explanation for that which is absolutely just. No less difficult, indeed!
In short, consider the concept of enlightenment in light of my earlier comment. Understanding God remains difficult until you cease trying and simply accept him on faith alone.
Not that I would recommend such a dogmatic thing!

There are plenty of finite things that are difficult to understand. Why be surprised if the infinite source of all existence is difficult to understand? Is it easy to understand the structure of an atom or DNA? Is it easy to understand a difficult logical proof? Then, why should it be easy to comprehend or understand God? But it is not impossible to understand God, only difficult. Pray for God's spirit to guide and direct your steps. Additionally, consult his word. Also see Plato's exclamation in Timaeus 28C. He too bears witness to the fact that it is difficult (not impossible) to know the maker and father of all things.

It is not difficult to understand God...but, one must first open up their minds/hearts to wanting to know about His grace and salvation. I have not had any difficulty understanding what God is about.

It is difficult to undersatnd god because nobody knows whether god exists and if so how his word his spread.
Does god even exist.
If he does than he would be so understanding that he wouldn't care whehter or not you understand him.

Why not just try to connect with Her and experience Her presence, rather than trying to "understand" Her? Intellectualizing the "encounter" may not be the best approach.
Try meditating a lot and "asking" to "encounter" that "Presence". Could be interesting :))))
