I don't know of any maps that don't show locations.
Your first step should be to look up schools that interest you. A good place for this is Princeton Review's web site. It allows you to filter schools by several factors -- including by state. It will also provide you addresses
Your next step is to look up those locations. I would advise having a good map of Texas that will allow you to get to each town or city that you want to visit. Then I would suggest going to Yahoo! Maps, Mapquest or Google Maps to find the location of each university in each town.

Get a general map of the state of TX. Be advise that TX is very big state with several colleges and universities. Once you reach the city of the university you are looking for map-quest the directions to it.

I don't know about a single map listing them, but you could look up the address for each one you are interested in and get Yahoo maps to give you driving directions from one to the next.
If you are going to the campus, call ahead and set up a meeting with an advisor from the department you are interested in. They might tell you about some scholarships you didn't know about that are specific to their department.
Get the campus tour, but also wander around a little on your own. Try eating in the cafeteria, and ask someone if you can see their dorm room so you can decide if you want to live on campus or not.
