The difference is geography, really.

While both are acceptable spellings, "gray" is an Americanized spelling of the original word.

Basically:

Gray is a color.
Grey is a colour.

It really depends on where you live. Some people say grey and others say gray. They mostly mean the same thing, but you can say either word.

I think gray is used more in America, and grey over here (Im in the UK) because I have an American version of Word and it says grey's wrong

The correct spelling is "g-r-a-y." "G-r-e-y" is the British version of spelling "gray."
