I actually don't believe they do. I think most of the mail is sorted on Saturday, then sent out on Monday. I'm pretty sure the USPS acts like Sunday doesn't exist. They wouldn't get backed up, because they arn't taking in any mail on Sundays either. Really there is no need to come in and sort on Sunday to have a fluid flow of mail through Monday.
