My employer has announced that there will be redundancies so have been applying for a new Job. I was wondering what I should write for reasons for leaving my current job. Should I be honest and say my jobs is unstable due to future redundancies or say the usual that I want to new opportunities and expand my working knowledge and so on.

If I were you I would stay a while in case you are one of the ones being made redundant. If you leave you will forfeit the right to any redundnacy payments.
By all means, put out feelers to find out what jobs are out there but think very carefully before handing in your notice.
Tell prospective employers the truth - that you may be being made redundant through no fault of your own.
