When I look at the task manager, I understand the "Applications" shows what is running, but is the "Processes" supposed to show an entire menu of exe. applications or should they be closed (end process)? Would it be harmful to close (end) them?

Many (probably 85-90%) of them yes! it would be harmful to close them! They are system processes that Windows uses to run your computer (they may differ depending on what software you have installed). See the article on page 90 of the March 20 issue of PC Magazine for info on processes versus malware.
