Usually they just film as they go. The reason for the big gap this season was to give them a head start so that they can run 16 straight weeks without pausing. Since they normally keep up I would assume they're still filming season 3, but they're farther ahead than they might normally be without the gap. They don't film too far ahead because shows get canceled. Until you hear news that they've been picked up for a 4th season, figure they're still doing the 3rd if they're not done yet.

since season 3 is airing now, i would guess that they are filming season 4 now.

they are currently filming in Hawaii and they are doing a 3rd season
