I know water tastes different once it is boiled. Is it as healthy and safe as filtered bottled water?

Nope.
Boiling will kill any germs or bacteria in the water, but it will not eliminate any harmful chemicals (like arsenic or lead, for example).
Bottled water usually used a reverse osmosis filter which takes everything out and leaves pure H2O. Salts are later added to the water to add flavor.

However, if you evaporate the water and then re-condense it, then it will be as clean as bottled water.

The only thing left when water evaporates is the impurities in the water, if you have pure distilled water there will be nothing left after it evaporates. Boiled water should be considered more safe and healthy than filtered bottled water. Most bottled water is from a the municipal water supply, filtered and then packaged. SOme studies have found high amounts of bacteria in bottled water. It's pretty much a scam when you can buy a gallon of gas for 3bucks which was pumped out of the ground in the middle east, transported by tanker to a refinery, then pumped to a tanker truck transported to your local gas station then dispensed into your car. And a 16oz bottle of water costs $1.20 thats a racket right there.

Whenever you boil water the heat (or thermal energy or barometric pressure) allows the H2O molecules to break the surface tension of the body of water allowing it to change its liquid form effectively causing it to evaporate, this is when water reaches its vapor pressure.

Boiled water tastes different because you have lost some of the H20 and left behind some of the contaminants and additives.

If you distill water, it will also taste different.

If you get filtered bottled water, it will also taste different because they add minerals to give it a crisp taste.

When water is boiled, what remains are the dissolved minerals (primarily calcium and magnesium carbonate.)

As for the healthy and safety aspect, there is a big misconception is that that we obtain minerals from our drinking water. This is actually not true because, in reality, the main source of minerals is always from our food and diets, not from our drinking water. Because in order to receive enough minerals for our body, we need to drink a bathtub amount of water everyday! Not very feasible. Your doctor will not prescribe you a "bathtub of water" if you are deficient in minerals, right?

Therefore watch out for the water products which claims that they can take out ALL of the bad contaminants and leave you only the good stuff (healthy minerals) in the water. There is no real purification method that can be selective and leave you only the "good" stuff. When filters leave you the "good" stuff, they actually leave you "most" of the stuff in the water. "Most of the stuff" meaning besides calciums and magnesiums, they also leave you pesticides and most chemicals. In this era of pollution where water contains much more disease-causing contaminants than beneficial minerals, it makes sense that the water we drink should be as pure and clean as possible.

Whatever minerals were dissolved in the water, is what's left after boiling.

Depending on where you are, or what 'kind' of water it is, It is probably mostly calcium carbonate, or it may contain iron salts.

These minerals add some "taste" to the water, and make it taste better than distilled water. Most minerals in small quantities are perfectly safe to drink. Government agencies provide for testing of public water sources to make sure they are safe to drink.
