Usually NOS is for "New Old Stock" which typically refers to an out of production item that is older (in age standards) but still new and unused.

Like any acronym it can have multiple meanings depending on the item in the auction. I have seen it used (although not as often) as "New Open Stock" which is basically the wrapper/seal is broken/missing but the item is unused.
