Usually the only subject that is always capiltalized is a language (e.g. English, Spanish, etc.) Math and science are capitalized when at the beginning of a sentence but otherwise, they are lowercase.
So, your example would actually be: Ex: The test will include math, English, and science questions.

no you don't capitalize : math , english ect . UNLESS they have a number behind them : Algebra II , History 1 etc. trust me on this one im just got done going over this in school .
