I have LOVED Edinburgh every time I've visited. I'm not much into sight-seeing either, but the castle is one of the biggest in the UK (if not the biggest). There is so much fun shopping on Princes and Queen Streets. Hiking up to Arthur's Seat is always fun.
Sometimes there are art and craft faires along Lothian road on the weekends. Not sure about this weekend, though. And there are always concerts and events in the park around the castle. It's such a pretty city to take a walk in.
Enjoy your time there!

Go to Brass Monkeys, a great pub just down a wee street (the street is opposite Chambers Street, off the Lothian Road if I remember rightly). Watch Lothian Road after dark though as there are a few seedy strip clubs on it.
Anyway google it and you should get the address!
Edinburgh is famous for ghost walks which take place in the evening. You might want to check that out if you are a group together, as it could be good fun!
Also try visiting the website www.visitscotland.co.uk as that should have links to stuff going on in Edinburgh.
If you walk up and down the Royal Mile you will hit the tourist trap bigstyle! There are however some good pubs on it.
And if you walk down to the bottom of the Royal Mile, on Canongate there is a place called 'Le Plaisir du Chocolat' - it's a chocolate cafe! Great hot chocolate and tea to be had there, as well as REALLY tempting cakes and pastries...
Finally you might want to take a walk up Arthur's Seat - a hill opposite the Scottish Parliament. It only takes half an hour but you get great views of Edinburgh!

you will get a superb lunch interior the Grainstore in Victoria street (in simple terms off George the IV Bridge. you have then have been given the alternative of procuring interior the previous city (touristy) or going to Princes street for the common intense street shops. The Grassmarket is a sturdy place for a style of pubs and eating places interior the evening and there are some nightclubs interior of sight in case you decide on an exceptionally late evening. Have a super weekend.

The legend of Leith is known the world over. Fun-loving folk flock to the Scottish capital in their droves every weekend because of its deserved reputation for delivering one hell of a good time, and we’re pleased to report that this joyous celebratory trend shows no signs of abating – especially when it comes to the needs of the bride-to-be in securing herself a send off packed with hilarity and hiccups. Yes, hen nights don’t come with any finer seal of approval than they do in Edinburgh. The city of castles, kilts and extremely canny party people has been collecting the empties and rolling out the barrel since before Greyfriars Bobby was a pup and when a military tattoo was a rite of passage rather than a date in the national calendar, so whether you’re guzzling on Gatsbys, chewing on a Chinese or dancing yourselves dizzy, girlie gatherings of big laughs and bonding are a dead cert in majestic Edinburgh.
Being the hen night haven that it is, you need to know precisely where you’re going to in places like the Grassmarket before you arrive so that you can sip back and enjoy the show. Check with us at the planning stage for pointers on your meal and club needs, plus any assorted live entertainment that you fancy including. Failing to prepare can do your ‘ead in in Edinburgh!
Winding down the Royal Mile – a parade of pubs and bars brimming with character, life and personality – past Waverley Station and along Princes Street towards the Grassmarket, you’ll have unbelievable choice in where to eat, drink and boogie. Assuming that you’d rather not risk the success of the hen night for the sake of a phone call in advance, our Q jumpers, reservations and all round advice on your evening’s entertainment will mean it’s not a strain spotting viable venues for you and the girls as you swan from one haunt to the next. Everything will be taken care of before you roll into town, including tasty options like male lap clubs or party bus tours of the best nightspots – both highly recommended and proof of the unique pulling power that Edinburgh holds in the hen world.
Still Queen of its castle after all this time, Mr Connery’s hometown gives the kind of hen highs that others can’t hope to reach. Nobody does it better...

Your best source of information is going to be the official tourism website for Edinburgh at http://www.edinburgh.org/ . There is another website for events at http://www.edinburghfestivals.co.uk/
When you've worked out what to do, the best site for accommodation deals at the last minute or in advance is at http://www.cheaperthanhotels.co.uk/United-Kingdom/Edinburgh/
I hope this all helps and you have a good time.

Not into sight seeing? Fair enough but you HAVE to do at least one ghost tour! I went with a few girlfriends and we did 3 in one day (i have a friends who's obsessed with finding a ghost!).
But the basic pattern went:
Hot chocolate with whiskey (surprisingly nice and warming!)
Pub lunch with wine
ghost tour
pub
ghost tour
pub
dinner with wine
late night ghost tour!
All the bars and pubs are great (one the first night we went to a bar/club a couple of roads back from Princes street.... near Karen Millen.... it was a great club but FULL of public school kids with English accents- which was quite sexy but we were looking for some Scottish guys!!)
The Dome is great for lunch as is The Witchery (near the castle, go for their pre-theatre menu or lunch- dinner is VERY expensive)
Basically it's impossible to have a bad time there- everyone is lovely, the food and drink is great and its a beautiful city!
Im very jealous!

George Street is where all the trendy bars (and men) are - George Street is parallel to |Princes Street.
Wouldn't go to Leith or Lothian Road for a night out
