For me, a hairdresser should look presentable and smell good (or at the very least like hair products :-). Hygiene is important because it gives an indication of what the shop they own or work in will be like.
Also, a hairdresser has to have a sense of style and a sense of what suits his/her customers. In other words, I want someone who will give me the freedom to choose my look but will also be honest about whether it will suit me or not. This is essential because their professional opinion is what usually gives people the faith and courage to let them make drastic changes.

I have been with the same hairdresser for 3 years because of several things...
She LISTENS!! I tell her what I want and she gives her opinion, we work out a style together and she doesn't go and do her own thing.
She is INTERESTED in what I do and understands what my lifestyle is. So each time I return, she knows what I need. We are working on my next style together - she told me, this time, what she is going to do for the spring for me, and I loved it. She took time to consider what would work for me and not just what the current 'trendy' cut was.
You need to feel COMFORTABLE with them as well. If you don't like the person, then you are not going to like the cut.
Try and get a recommendation on someone. If you like how someone's hair has been styled, ask them who they go to!

You need to be able to talk about holidays all day, every day. I dont why this is essential but all hairdressers do it.

The ability to listen - if I know what style i want then please cut it that way - not how you think I should have it.
Tact - however if I have chosen something that will make ridiculous then please have a discussion with me before you start cutting and try to change my mind.
show a genuine interest in the person whose hair you are cutting - faking it will not get you a big tip
