It's all about the microscopic structure. Some metals do have a crystaline structure and Break very easily.

Metal can release Atoms from the valence, but Ionic Crystal is built of a minerals formed.

Metals are bound by metallic bonding, with delocalised free electrons shared through the lattice. This is a weaker type of bond than ionic or covalent bonds htat occur in other crystal (metals are almost all crystalline too).
