We are generally called Edinburghers but used to be called Edinburghonians. Here are some famous ones;

My grandfather was from the region and he told me that it was appropriate to be called a "Dunediner" and refers to the old name of the town, Dunedin, although Edinburgher does seem to be used a lot.

This is a more recent assessment:

As far as Edinburgh is concerned, there isn't really a term in common use. I certainly wouldn't refer to myself as an "Edinburgher" for example. I know that in the 19th century there were a lot of "native names" usually based on the Latin form for the town name - which is where Glaswegian comes from, so
there may have been something at some time, but I don't think it is used much these days.
