As a rule you can usually plant trees anytime you can work the soil. Some prefer spring on the other hand.
Most orchard trees (apples, peaches, cherries, etc.) should be planted early spring.
To trim also depends on the tree. A common rule is if it blooms in the spring to prune right after blooming.
Most are safe though in the winter. But some trees such as the birches should be pruned in late summer to prevent bleeding.
Get yourself a good quality pruning book, they're usually around $20 at home centers and look up your type of trees.
Also never take off more than 30% of the growth at one time

Plant in the fall so the roots have time to strengthen before the growth starts. Prune in the winter or early spring while the sap is not running. Pruning at this time is also good because you can see all of the branches and can see which ones have to come off.

Ive always been told that the fall is best for tree planting and most pruning. flowering or fruit trees i usually trim after they are done flowering or bearing fruit, never in the summer unless they get damaged

When they are dormant. This would generally be between Nov and March in the northern hemisphere, depending on climate. If they are in a pot, they can be planted anytime. Make sure they get enough water.
