The usual flying time to Egypt from Australia is approx 22hrs. There are no flights that go direct to Cairo, Egypt.
The usual stopovers on the forward journey are approx.1-2 hrs.,at either Singapore or Bangkok.
Some flights will also stop briefly at Dubai.
Where you have the major stopover, will depend entirely on which airline you travel with.
On the return trip, the flights all have slightly longer stopovers.
Many things regarding the actual flight time come into consideration as to the actual flight time.Any time an airline will give you is only an estimation. It relys a lot on the weather, wind direction, air traffic and how efficient the ground staff and airline personal are in dealing with embarking and disembarking passengers.

Well, it really depends on from which part of Australia. If we assume from Sydney to Cairo, then expect a 20 hour flight. There are no direct flights, so the transit counts.
Anyways, I am including a reference site that helps determine flight time, simply include the city name and the destination and it should provide you with the average time for the shortest possible flight.
