I know girls touch their dress for several reasons to curtsey, to look good when dancing, and not to trip.

Can't touching the dress stretch it out of show eventuually so the material gets to stretched out? How do I prevent this from happening?

Unless the dress is made of gauze or some extremely unstable fabric it really won't be a problem. Clothing is designed for movement. Think of a long sleeved shirt. Every time you reach for something you are stretching the fabric but you don't end up with one sleeve much longer than the other. Unless you are pulling the fabric to its limit you won't have an issue just lifting the dress in the manner you have suggested won't cause stretching.

No, even if you do cursty a lot, or use the dress a lot the dress will be fine. It won't stretch out at all. The only way that it would be if whenever you touched it, you really yanked on it. If you kept pulling it hard, it would maybe stretch an inch MAXIMUM. Don't worry. Your dress will last a very long time.
